Selected by Hammm because it is a young farm, with small production and rhythms that respect the animal and Umbrian craftsmanship.

Handcrafted workmanship

The preparation is entrusted to expert hands that respect ancient techniques: a calibrated salting, which follows the weight of the ham, a washing with white wine that delicately perfumes the surface, and the final addition of black pepper that protects and enriches the aromatic profile.

Seasoning

It matures for at least 18 months, up to over 2 years, in environments suitable for slow and natural maturation.

How to enjoy it

To enjoy it at its best, slice it thinly and serve it at room temperature, accompanied by bread or Umbrian torta al testo; also perfect on its own, to capture its purity, or on a cutting board. Convivial with cheeses. Perfect with a glass of Zigozago pure Syrah red wine.
