Umbrian oil is the best in the world: a clear organoleptic profile, a balance between bitter and spicy, and a great richness of aromas and polyphenols.
Our olive trees grow between Assisi and Mount Subasio: breezy slopes, altitudes with marked temperature variations, and poor calcareous soils that concentrate aromas and flavors. The typical Umbrian varieties—Moraiolo, Frantoio, and Leccino—express green notes of cut grass, almond, and artichoke, along with an elegant finish.
Our oil comes from a small, women-run farm, free from chemical toxins: no herbicides, no pesticides. We keep the soil alive with natural grassing. Early, manual harvesting, pressing within hours, cold extraction, and unfiltered oil: a natural veil that preserves its character and freshness.
It is our feminine way of caring for the olive trees of Assisi.
