Umbria IGT Sparkling Rosato - Syrah Greghetto - Mindy

The wine

"Mindy" is an unconventional sparkling rosé, born from a blend of Syrah (95%), grown on marly soils, and a touch of Grechetto (5%), sourced from soils rich in rock and clay. The vines, planted between 1996 and 2005, face south and east, where sun and wind yield ripe, concentrated grapes.

Characteristics

The name is an irreverent homage to an animated character, but inside the bottle there's seriousness, technique, and vision: the grapes are harvested in late August, destemmed, and immediately pressed, triggering spontaneous fermentation. The wine rests on its lees until bottling, when dried Grechetto is added to trigger the second fermentation in the bottle.
