Artisan workmanship
Spalletta is obtained from the front part of the pig and has a more compact fiber and a bolder, more intense flavor. The lower fat content and more concentrated curing process give this cured meat a rustic, distinctive character. The production process follows rural tradition: salting, hand-washing with white wine, and black pepper for protection and flavor.
