Selected by Hammm for its authentic, rural soul, winemakers revitalizing forgotten vineyards in the Umbrian hills. Each wine is born from respect for the land and a desire to express it honestly.

The wine

Made from a single varietal, pure Sangiovese, this wine comes from south-facing vineyards planted in 1998 and grown on deep, clayey soils. The name comes from the stream that runs alongside the vineyard, a reminder that wine, like water, needs time and space to find its way.

Characteristics

The grapes are harvested at the perfect point of ripeness and processed immediately after harvest: destemmed, pressed, then spontaneously fermented with indigenous yeasts in stainless steel. The skins remain in contact with the must for approximately 20 days, allowing the wine to absorb the full power of the fruit. The aging process is long and patient: 70% of the wine rests in tonneaux for 12 months, the remainder in stainless steel. Before bottling, it waits another year to regain balance and harmony.

Tasting notes

The result is a full-bodied, deep, spicy Sangiovese, with a well-polished tannic texture and a full sip.

Recommended pairings

Ideal to accompany first courses with meat sauces, grilled red meats, roasts , mature cheeses or simply a convivial table.
